Maren's Test Kitchen

Last night I made a rather delicious dinner. In fact, it was touted as "the best dinner I've ever had!" by at least one diner. Every once in a while we all make these kinds of meals when we stop and say to ourselves, "I wonder why I don't have my own cooking show?" Good question. On the other nights, though, it's the same old tired and boring fare. Funny how the genius comes and goes. (Maybe that's why I'm not a celebrity chef.)

Dinner consisted of the following: mini bagels brushed with olive oil and topped with feta, spinach, ham, and rosemary, then broiled. We also had fresh farm stand tomatoes sliced topped with fresh basil and sliced mozzarella cheese, also broiled. Then there was sweet corn on the cob, and chocolate-banana-peanut butter shakes (made with Ovaltine, 2 bananas, a generous spoonful of PB, light ice cream, skim milk, and ice). Totally yummy!

So, what's for dinner over at your place? Made any super meals lately?

That sounds FANTASTIC!

Tonight I made a frittata for Michelle and myself from leftover linguine, egg beaters, onions, and green peppers, plus pan-fried zucchini and cheese on top. The middle was just slightly runny, but I was still proud of myself. The kids opted for leftover pizza instead.

Ooo- we made frittata last week. I love it. The kids also said it was the best dinner they've ever had. They also said that about whole wheat rotini with broccoli, meatballs and cream sauce.

Tonight it was pizza margherita (sp?), spinach/bell pepper/sprout salad and raspberry/mango/crystalized ginger fruit salad. Dessert was homemade peach ice cream with diced crystalized ginger. Oh, man. Yum.

I've got kids gone at camp and all the time in the world and I still don't feel like whipping up something that elegant in the summer, and you've got 4 little ones including a new baby! You *should* have your own show.

One highlight this week was Greek pitas - sauteed pork strips served in a pita with a salad of garden cucumber, red onion, red pepper, feta, sour cream and dill, with olive-oil-drizzled orzo on the side.

We also had a delicious spaghetti carbonara. Really simple but really comforting. Mm, bacon.

Can you put that spaghetti recipe in the family cookbook? I've had it at your house but am not sure how to make it. Also, those pitas sound amazing.

I've been doing better than usual the last 3 weeks, planning meals and cooking real things. I try every week to do one slow cooker recipe, one RR365, a couple other new ones and a couple standbys, trying to get fish in at least once a week. One that I've made twice and may be cookbook-worthy is Crispy Ginger-Lime chicken thighs - you make this carribbean-tasting ginger lime onion curry paste adn put it under the thigh skins, then broil them. Pretty delicious. Nothing I ever make is anyone's favorite meal because all my kids like is bread and sometimes yogurt. Forget rice or vegetables and definitely forget meat. I keep cooking, though!

But last night Mom & Dad came over adn brought cabin weekend leftovers - ribs, corn, watermelon. It's totally the life, living near them. Ton, email me the spaghetti recipe.

Oh Yum! Sounds so good. WE had boring old sandwiches tonite. So need some creativity!
